As I watched that scene again recently, I had a thought...
I know it's clearly said that her refusal was a malfunction, but wouldn't some of the robot women be programmed to resist? The guests are told that there are no rules and that they can do whatever they want, so what if what one of the guests wants is to force himself on an unwilling girl in the castle?
They allow people to participate in simulated murder and medieval world has a working torture chamber where guests are probably allowed to abuse some of the robots, would they really draw the line at simulated rape?

I truly don't believe that they would draw the line at simulated rape.
The robots, for all intents and purposes, are just toys for the amusement of the respective guests. Simulated murder seems commonplace, and I believe simulated torture was touched upon. The resort is clearly aimed at adults, not families. The bourgeois types who can afford to visit likely wouldn't think twice about committing heinous acts. And for a price, too.
Human emotion does affect the guests, though. The bespectacled man who becomes Sheriff struck me as a meek type playing at being strong and tough. For example, when he clumsily fails to open a door after giving a menacing speech to the robotic crowd.
The portly man who visits Medievalworld seems even more meek. He shows fear of the "Black Knight" robot despite likely knowing being hurt, losing or feeling pain is simply impossible. He also tries to talk his way out of being confronted by him, making excuses and clearly reacting with trepidation and nervousness.
The newcomer attending Westworld with his friend is similar. He reacts nervously to being goaded by the Gunslinger robot, despite his friend remaining totally calm. His friend knows it is all a big lark, but the newbie is hesitant to confront the artificial nemesis.
The female wench robot rejects the man due to a programming flaw. This much we know. But rape is only a possibility if the guest wills it. The staff would likely make it incredibly easy for a guest with dark sexual appetites to fulfill their cruel fantasy. Customizing the scenario right down to level of resistance and verbal response.
These are robots. In the setting of the movie, they aren't considered human. Constructs with no life or rights, simply there to provide a convenience.
It all comes down to the guest. Would they have the lack of empathy and emotion required to commit such a horrible atrocity? Would it fatigue their mental state? If a person has morals, they would be unable to enact a rape fantasy on a replica of a human being. Just as they'd fear or be hesitant in starting a "fight" with an antagonist, they'd feel disgust from a moral standpoint in regard to simulated rape.
It'd be fulfilling the rape fantasy, not rape reality. In other words they'd resist, you'd overpower them, they'd ultimately submit and give in to your manly needs - its all a very primal sort of thing that both men and women get off to (at least to some degree): man dominating woman, woman's sexual drive ultimately bettering her resolve.
So I don't think it'd be as sadistic and atrocious as you imagine it would be. Many couples role play such fantasies.
This exact question is answered by Ed Harris in the remake. Depends on the programming of the robot. The "girl next door" or servant are not whores so they don't give it up so easy. Ed Harris says "I want you to fight" before raping the girl in the opening scene of the remake while Teddy dies. So yes, simulated rape fantasy. The hbo series is fantastic so far and plays at the psychological aspects alot more.

The VERY thing occurred to me when he puts that up to his mouth ...
But then, we had only moments come back from Westworld where our 2 boys wake up in the saloon with a hangover and what, the night crew doesn't clean up if there's a couple of guests laying on the floor? So the film was already starting to be nonsensical before the turkey leg.
Let's not even talk about how a "can't get hurt" guest can be involved in a fist-fight brawl like that.

Well, it had been cooked and cooked food doesn't go bad as fast. Beef jerky can sit out for weeks or years and be eaten without problem. Besides, this is not a real medieval setting and so everything is not covered in a layer of filth. Plus, this is the future (relative to 1973) and making food non-perishable was assumed.

What bothers me is that the staff know everything thats going on, so every time you bang one of the robots a dozen people are sitting there at their consoles eating their sandwiches and ogglying you.
