Sir Hiss was a snake....why the hell did he have fur

He didn't have fur. o.o If you mean why did it look like he had fur when John yells at him, that was for comedic effect to show how loud John was yelling.

I noticed that as well. I'm just going to assume it's either an animation error or he's starting to shed his skin. It happens.
