Hello. I just watched Paper Moon again a few nights ago ... one of my all-time favorite movies ! I am also a long-time collector or pre-WWII 78 rpm records, and I immediately recognized the song you asked about in your August post. The name of the tune is "Mississippi Mud", and what is heard in the film at the point you describe is an excerpt of the 1928 version by Paul Whiteman's Orchestra, with Bix Beiderbecke on cornet. (I have a different version by "Frankie Trumbauer And His Orchestra" [also with Bix], a smaller contingent of Whiteman musicians, with vocal by Bing Crosby. This latter is a somewhat more languorous version than the snippet you hear in the movie.)
I noticed that in the title listing you give for the soundtrack, this does not appear, and also that there are at least several songs or artists listed that weren't used in the movie. Not sure what was up with that - perhaps, in 1973, only forty-something years after their original issue, there were still problematic/expensive royalty issues or something with some of the recordings, and the anthologist was forced to substitute material.
