What was the point of Grady? He is annoying? And where did Fred go for several episodes?

He was just a friend of Fred's. His other regular friends were Bubba and at the end Elroy and Hutch. Redd Foxx had a contract dispute which is why he was away for several episodes of which Grady filled in. Grady even got a spin-off show of his own!

I loved the Grady character. Whitman Mayo was a great actor.
