Remember those plants Phibes was mixing and boiling in his lab earlier? He made a sort of syrup to attract the ants, which would eat the syrup and thus the nurse's face.

They were not ants. They were locusts, hence one of the plagues that
Dr. Phibes was using in his themed string of murders.

The substance is liquified brussel sprouts.

I visited the set at Elstree Studios and the actual liquid used was green washing up liquid but you are correct in saying it was meant to be liquified Brussel Sprouts.
