Heidi is not a fighter, and Cartright Jones is a private, a minor character, and not particularly interesting for us to look at in this exciting climax to the film. He's already played his part, as has she. The only real reason we even need to see them in the plane at the end is for the sake of continuity, but from a film perspective our attention is rightly focused on the big three protagonists in a part of the film involving fast cuts and lots of action.
But surely Heidi's mysterious whereabouts matter as a film-making process for us, the audience?
Heidi's amazing cleavage alone - which even I can appreciate - is reason enough for her to have been included throughout the film alongside that hunk of a man Richard Burton! It's a shame it didn't happen.
I really thought he was going to screw her in the Gasthäus. I wish he would have. Mmmm...

She leaves Mary's room and goes down in the cable car. There's a scene of an SS soldier checking her out at the bottom. Then she is seen going into the garage where the bus is. Her role in the plan at this point seems to be securing the getaway vehicle (she's probably the one who told Smith where he could find it). After that, she's on the bus during the chase sequence and boards the plane with them.
"I mean, really, how many times will you look under Jabba's manboobs?"
