the peasant lady in the farmhouse, who helps Newman kill the German spy, is played by a young Carolyn Conwell, a.k.a. Paul Williams' mother on the Young and the Restless.

I know it's six years later but my jaw just dropped. I'm a Y&R fan going back 20 years and saw Torn Curtain tonight. I can't believe the peasant woman played Mary Williams, or Meddlin' Mary as I liked to call her! Thanks for posting - otherwise I never would have realized it!
