More like man-hands. During the close-up of Lady Finger's hands while she's shuffling, its clear that the double's hands belong to a man wearing nail polish.

"Lady Fingers" are sandwiches, cut into triangles with the crusts removed. Maybe she was known, in the story, for her eating habits. Thus, fat hands.

The actual dealer is shown in a documentary, included with the DVD. He is a man and taught Blondel how to deal. I guess she couldn't cut it for the final cut. (no pun intended)
