How did the band learn so quickly how to play?

They didn't. They (the River City public) thought (or at least accepted) they did, therefore it was. That's the best I can do.

It was either a passage of time and Harold Hill became a real music conductor, or, if you want to go a darker route, it was all in his head and it didn’t actually happen, leaving the ending ambiguous.
