It's actually, "Ye gods!", not "gads". It is a mild oath much in the same vein as "Darn!" or "Oh my gosh!" or Tommy's "Great honk!". It doesn't really mean anything but a registering of suprise, horror, or excitement in response to something.

Cute question! The expression is "ye gods" from "ye gods and little fishes" - a flowery 19th century American expression. It probably goes back farther to the UK somewhere. Hope this helps.
Oddly enough, I still use the phrase "Ye gods and little fishes!" when I'm incredulous about something.
Nothing, however, beats Gingold's "BAAAAAALLLLLLLLLLLLLLLLLLzzzzaaaaaaac!"
