I just saw the episode The Ex King of Diamonds. I'd heard that there was an episode which was a kind of practise for the Persuaders. I just wondered if this was that episode, cos he does team up with a Texan and it reminded me a bit of Overture, mixed up with the beginning of Moonraker (the book, not the film)

Yes this was the episode that was a test for the Persuaders series. I really liked this episode alot, and the Persuaders series is really cool as well.
