Well the only authenticity would have been for them to speak Mexican and then no one would have understood it. Realistically 99% wouldn't have spoken English so having them speak Mexican accented English would also be ludicrous. It's called suspension of disbelief.

A village full of illiterate Mexican peasants and bandits who all speak English? Even to each other?

Yeah, right. No, the filmmakers copied a Japanese story and when they realized their version should have a language barrier, they decided to just... leave it out.
