Gaby entered the convent because her father refused permission for her marriage to the boy "Jean". Jean's mother had died in an insane asylum. This was mentioned in the book,
You see an unspoken reference as Gaby is packing her suitcase to leave: There is a small group of items on her desk, with the note saying "Return to Jean".

She managed to forgive her father for putting a detour to her life path. She forgave a Congolese for killing her Mother. Yet, she wouldn't and couldn't forgive a soldier for killing her father in a war. And that seemed to be the final straw that pushed her to leave.
Or maybe she was still obeying her father while he was alive. Once her father died, she only had herself to answer to.
