When Harker is first attacked by the female vampire, Dracula comes in and is really pissed and attacks her. Was she forbidden from drinking blood?
And why would Harker try to stop Dracula after she had bitten him?
It was based on a scene in Stoker's novel when Dracula "saved" Harker from being fed upon. He wanted to keep Harker alive long enough for him to help Dracula move to England. In this film, Harker isn't a realtor, so I assume Dracula wanted to just either keep him as his personal scholar, or feed on him himself.

If the whole set-up about Dracula wanting a "librarian" was legit, he probably did not want Harker to know about his being a vampire. The vampire woman blew that! Of course, in the novel (and various other film versions), Dracula forbids his wives from touching Harker... until he's DONE with him, then, he tells them, they can have him.
The way Christopher Lee grabbed that woman and hurled her to the ground was clearly meant to show that this wasn't the kind of Dracula you were used to, this guy is a savage ANIMAL under that gentlemanly facade.
I also get a kick out of the scene near the end where he just TOSSES Mina into the open grave, then starts shoveling dirt on top of her. (What a bastard!) It also made me think of Ray Milland at the end of THE PREMATURE BURIAL. ("My beautiful VIPER!")
In the novel, Dracula's reason for keeping Harker alive is, to paraphrase Dracula himself, that "he's mine". I never thought of it as Dracula keeping Harker alive to make the move to England easier; he can manage fine by himself, and does so later, even without Harker.
So I reckon it was because Dracula wanted Harker for himself. And of course it'd make him furious that his wife (or one of his wives?) attempted to bite Harker and drink blood that her master had earmarked for himself.
