If the whole set-up about Dracula wanting a "librarian" was legit, he probably did not want Harker to know about his being a vampire. The vampire woman blew that! Of course, in the novel (and various other film versions), Dracula forbids his wives from touching Harker... until he's DONE with him, then, he tells them, they can have him.
The way Christopher Lee grabbed that woman and hurled her to the ground was clearly meant to show that this wasn't the kind of Dracula you were used to, this guy is a savage ANIMAL under that gentlemanly facade.
I also get a kick out of the scene near the end where he just TOSSES Mina into the open grave, then starts shoveling dirt on top of her. (What a bastard!) It also made me think of Ray Milland at the end of THE PREMATURE BURIAL. ("My beautiful VIPER!")
