What do you think would have happened to her in Hollywood or along the way? We know that the poor girl doesn't have singing talent and isn't graceful; she doesn't have the skills or the intelligence to become the success she dreams of in Hollywood. Perhaps ADHD (I agree) Beauregard/Bo is the best thing that could happen to her. He doesn't mind that she's "been around the block and back again"; she's his angel, and he wants to take care of her. It's possible that she will regret giving up her dream, or she will have fun singing for the cowboys on the ranch. In so many ways, she still is as innocent as he is~far too naive in spite of her experiences. I think they should give it a try. She can always pack up and catch a bus if she's unhappy at that in-the-middle-of-nowhere ranch.
It's somewhat like the ending on the bus in "The Graduate": Now what? Will the couple make it work? You have a bright couple (Elaine and Benjamin) having that moment of seeming unsure of what they've done and the not-very-bright couple (C&B) looking forward to their future together. Maybe Bo is that irresistible force that will keep things moving, never giving her time to wonder if she made the right decision. She certainly tossed away that map quickly, not folding it and putting it in her purse! She seems blissful at finding a man who will accept her though I wonder if she's going to end up cooking and cleaning, daydreaming about her life as a chanteuse.
