hands are a way we touch the world, and Kate's are deformed.
There is also the theme of passing good/evil through generations (more of that in the book) and it is interesting that Kate inherited her mother's affliction.

Hiding her hands may also have another meaning in addition to "try to appear normal": maybe, subconsciously, that's a sign of guilty: as Lady Macbeth always washes her hands, Kate's habit to hide them is to hide her bloody crimes and an attempt to keep masked/hidden her true nature.
