Why were they rubbing eggs into the horse?

This scene baffled me. I tried to Google but I found nothing.

thats becuase google doesn't have everything, often to much of most things, but never everything, that being said, the reason is just like a raw egg shampoo, it's the protien. the protien which is good for hair, it givers it a good scheen (shine), it doesn't matter if it's raw or hard boiled, (as in the movie) , it's just easier for a person to do there hiar in raw eggs, and better to use hard boied in the high desert heat in southern mexico, becuase face it, a raw egg would rot and spoil very quickly, and the smell is pretty suphurus, nothing to techincal, been done for years, just with all the store bought products , it's just not done much since WWII Iguess.

Plus it emphasized the fact that the rich horse owners would rather use eggs on their horse's coats than feed the people. It showed the disparity between the rich and poor, especially when you see the small child trying to eat the shampoo.

That is very interesting. Thank you both.
