Does anyone else think the film seems to suggest that Zapata did not/was not able to consumate his relationship with Josefa?

Nah, they had already consummated. He was brooding because he had to go to the city and meet "educated" people, but was illiterate. So he asks her to teach him how to read, which she does by breaking out the opening pages of the Bible.
