I've wondered about that too. However, while clearly taken during the location shooting for the film, it's also quite obviously a behind-the-scenes photo, snapped during a break in filming, not something lost or deleted. Note that the woman walking with Kirk Douglas is wearing modern clothing, not an 1830s-style costume, as well as a 50s hairstyle. They're also plainly posing for the camera, or at least aware they're being photographed as they walk toward it.
I thought it might be his wife, though from my vague recollection of what she looked like I can't be at all sure. But she's definitely not anyone in the film itself, one reason I thought it might be Mrs. Douglas. It's kind of a silly photo to use for the DVD's cover art (it's a UK disc) instead of using a scene or artwork from the movie, although I've occasionally seen such things done before.
Anyway, she's not in the movie, and the picture has nothing to do with the film itself.
