What is Henry Fonda's attitude / Indians in this film?

Colonel Thursday's attitude toward the Apache is one of dismissive contempt.

Colonel Thursday's attitude toward the Apaches and Fort Apache itself is of contempt. He thought the Army had disrespected him by posting him to this fort, and while talking with Captain York (John Wayne's character) the subject of the Apaches came up. Thursday asked York if York seriously thought the Apaches could compare to the Sioux, and York replied that many years before, the Sioux had tried to encroach onto Apache territory and got thrashed. (I'd like to know if that last bit about the Apache vs. Sioux was historically accurate.) ;)

From what I've been able to glean from historical records through the years, the part about the Sioux getting their butts handed to them by the Apaches is true.

The Apaches were widely feared by EVERYONE as ruthless warriors who rarely knew defeat.

Bari: An interesting historical factoid that I learned: The Apaches used to reside in Texas but where driven out of there by the Commanches---so that gives you an idea as to how formidable the Commanches were...

NO, as far as I know there is no record of a Sioux-Apache battle. However, there was a small plans tribe of Apache called the Kiowa Apache, close freinds and allies of the Kiowa obviously, and they could have have had fights with the s Sioux (and usually lost, given their small numbers).

This line was from Fort Apache about the Apache defeating the Sioux was repeated in some later western movie, possible Apache Uprising.
