Kincaid's gun was found on the Anthony Quinn character: how did he get it? And what happened to the 50 or so head of cattle the Martin bought from Kincaid??

They were both addressed in the film - Kincaid sold the cattle, reluctantly (being out of season I think, he had refused to sell any cattle in the Spring according to another character), and without a bill of sale, because he was nowhere near home and Dana Andrews figured he'd get it later, never suspecting what would come to pass. And Quinn found the gun on the trail. The mob thought ALL of these things happening was unlikely, not to mention they were just bloodthirsty.
