It's been a while since I've seen either film, but I'll give the slightest of edges to Gunga Din.
The Lives of a Bengal Lancer (another film I haven't seen in a while) is also very good.

Beau Geste, hands down. Beau Geste didn't establish itself as a goofy comedy and then try to become a realistic war film in the last reel. It stayed far more true to its goal.

I like Gunga Din a little more, but Beau Geste is a great movie too. That first scene is haunting.
