She is probably much taller now, but they just haven't bothered to update her height.
Well, based on what I just saw on the full trailer for Logan (2017), she is really really tiny compared to 6' 2" Jackman, so... She might really still be within a few inches of her stated height.
I thought she was like 7 or 8 based on her relative height. That's why I came looking to confirm that and find her age is actually 11.

Well, as you said, Hugh is 6'2". So he makes even fully grown average woman look tiny.
Besides, Logan was shot last year, which means that Dafne was 10/11 years old at the time. That's still before girls normally tend to have their growth spurt. So she has still a lot to grow.
Also they maybe made her look tiny in purpose using movie magic to contrast her ever more with Logan.
