He was the King, he could eat whatever he wanted, the health benefits of vegetables weren't well known then, certainly not as the main diet. In any case, I heard that people had to make do with what was available, and meat was a luxury from what I remember reading.

I've seen veggie recipes from that era, and they typically went something like "boileth thy vegetable an hour, andaddeth enough butter to cover" or "They saladmogundy (salad) requireth one part lettuces to five parts cold meat" .
Of course I was never invited to dine at Henry's table, but I assume that if someone had sent out lightly cooked vegetables or a nice crisp salad of lightly dressed leafy things, he would have thrown a shitfit and said it was only fit for the servants' hall.
