Now she's a woman again. Although I would bet she couldn't explain what that is. I did all that misgendering for nothing. I feel let down.

I wouldn't call it a 'grift', that implies conniving.

She's genuinely mentally ill and in all liklihood honestly felt like she was 'non-binary' or whatever.

She did the non-binary thing to successfully deflect all the flack for the whole Yoghurt shop fiasco. Was a 3D chess move.
Sounds pretty conniving to me.

From everything I've heard of Demi, she's legitimately mentally ill and has had drug addiction issues. She's a damaged person.
