I think she replaced her agent as well after leaving iCarly, so she seems to pick very smart people.
My guess is since she was the biggest name attached to the original in the demographic the movie was targeting, and that Despicable Me was made by some random French company and not a big name American company, it's likely Miranda's agent decided to put in that 20% cut and other future payments in exchange for a lower up front payment, betting on the movie being a hit which would make more money than just accepting a slightly higher up front only payment.
Alec Guinness & George Lucas both got rich from Star Wars for similar reasons, Lucas got 20% of the gross box office, and merchandise rights (iirc), and Guiness got 2% of whatever Lucas got.

Well when Despicable Me came around Miranda would still have been on icarly and at the height of her fame, so I guess it's not that surprising.
