You might notice that in this video of the training scene Benedict is wearing a sleeveless shirt. In the completed movie the shirt he wore for that scene had sleeves.
My theory regarding why they made the change is so that Mordo appears stronger than Strange, because you can see his bulging biceps. Strange appears weaker since you can't see his muscles. That was a deliberate part of the story they were telling. Stephen Strange is meant to seem unlikely to become a superhero.
In the linked video where both Benedict and Chiwetel have bare arms, you can see that their arms are almost exactly the same size; but since Benedict's skin is so light-colored, his arms reflect more light and catch the eye.

That's true - you'd never know that he had those muscles under the long sleeves. We eventually do see his arms (and more) when he's in the bathroom shaving and giving himself a makeover.

Imho, when you have seen twelve years a slave, you know there is no way Benedict Cumberbatch and Chiwetel Eijoffor are in the same league as is comes to shape.
