It's stated that she had to learn to fight in the wushu aka kung fu style of martial arts for "Kill Bill Vol. 1". I don't know what she was trained in prior to that film.
Movies will make you famous; Television will make you rich; But theatre will make you good.
I just watched Double Dare, a documentary about her and a well known American stunt woman. She has a background in gymnastics, and there was a short clip of her training at a kick boxing gym. No mention of formal MA training. The documentary did have lots of clips of her training with fight choreographers. As athletic as she is, its not surprising that a few months of training with a choreographer can make her look convincing as a martial artist.
