I don't know the answer. However, many point to the '-man' ending as indicative of German (or possibly other Nordic origin).
For instance, Guzman is a well-known Spanish surname that one gentleman with that name says may be from the German name Goetzmann, which got changed by Spanish preferences to Guzman. http://genforum.genealogy.com/guzman/messages/183.html
As a rule, there are no other Spanish surnames ending in '-man.' Aleman may be an exception, but is a direct borrowing from Latin sources: Aleman, meaning 'German' (Allemand being French for 'German,' the Latin surname Alemannus referring to someone of German origin). (The Romans were fond of dragging captives from their northern conquests back to Rome.)
The Spanish would seem to believe that Guzman means 'good man,' but the Latin for man is homo or vir, the Spanish being hombre, French homme, etc. so the '-man' part is most likely of non-Spanish origin.
Same with Yustman, which can be spelled Justman in German with the same pronunciation. Both of those names can be Jewish names, if the various WWW genealogy pages can be believed. Justman pronounced by the usual rules of Spanish pronunciation would be something like Hoostman (would it not?), so to avoid that, the Yustman spelling is taken and would be pronounced with the expected y pronunciation on the front, much as it would be in the German pronunciation.
I myself was thinking Jewish. Maybe because her character in The Unborn was. But it seems more plausible that her family were European immigrants to Latin America in the 1880s and 1890s. Much like Gisele Bundchen's ancestors.
shareI assumed she was Jewban (a Jewish Cuban), but since her bio says her dad is French/Italian/Columbian, I'm going to guess she's half Jewish and half Cuban (of Spanish ethnic origin on her mom's side). Yustman is not a French, Italian or Columbian last name unless you're of Jewish origin. She's beautiful, whatever she is. Mixed heritage always seems to make pretty people.
