There is no way that Jessica is 5'8. Here she is with Kate Beckinsale (who is listed as 5'7) and wearing the same height heels and she is obviously shorter:

Also, at the Stand up to Cancer benefit, there is pic of her and Gwyneth (who is listed as 5'9), and Jessica is at least 3-4 inches shorter. I think JB is more like 5'5 or 5'6 at the most.

Actresses and actors lie about their height all the time. So do MMA fighters and boxers. There is no official taking your height, so you can pretty much say whatever you want.
Tom Cruise is listed as 5'7" on IMDB, only way he gets there is with 2-3 inch lifts.

As someone who have seen her on the streets in person I can confirm OP's suspicion that Jessica Biel is not 5'8. No way in hell is this woman 5'8. I am pretty short. She was standing next to me at the intersection. So at most she is 5'7 but I believe more likely 5'6. I was with a male friend when we saw her and we were both shocked and found it hard to believe it was Jessica that we saw standing us to us on the crosswalk. But we later googled her and she was indeed photographed wearing the same clothes the day we saw her in our city.
