Teri Polo is NOT dead, but my sister and my friend both told me that "The lady who played Ben Stiller's fiance in Meet the Parents and Meet the Fockers died." I know it isn't true, but did someone that looks like her or someway involved with these films die?

You're right, Teri didn't die, but the actress who played her sister, Deborah Byrnes (Nicole DeHuff), in Meet the Parents did.
