Anybody know how many languages she actually speaks? I know French and English for sure, but I just saw her in Nuovomondo, and she spoke Italian. I wonder if she's fluent in Italian as well.

In fact, I don't know if she's completely fluent in Italian, but as far as English is concerned, she said in an interview on French tv that she's fluent in English but not bilingual. In fact, when she was young, her mother (English actress and singer Jane Birkin) used to speak French with Charlotte and her sisters, so Charlotte said she learnt English later.
