The way he uses color
As an artist, it's so interesting for me to see all of his work because you have that range of color. If you watch Trainspotting, it's very gray and bleak and then watch Slumdog or 127 Hours and you have such vivid use of it.
At first, I thought he was changing his style and then I realized that he is truly an artistic visionary, using the color to set the mood and tone of the film.
28 Days Later and Sunshine are also a good examples, well all of his work is.

I think he is one of those directors that truly understands colors and how they work against each other.
