I haven't liked her since she was at an award show (Oscars I think) and when the winner was announced on some category, the camera showed her for a few seconds. She was sitting there with no smile, an extremely bored expression on her face and was doing this pathetic, slow "clap." Totally classless.

Mariah Carey and Jennifer Lopez; I've heard and seen way too many things about them that confirms this. They make the most ridiculous demands on how their trailers should be decorated (JLO requires everything to be white), they tend to treat their crews like slaves (I've seen videos of Mariah where she had an assistant hold a cup and straw to her mouth because she couldn't bother to do it herself)

I haven't heard about Gwyneth being horrible but I haven't really looked into it.

I hadn't heard anything either, then I looked into it... and it instantly became clear that she really is horrible. I can't think of any other celebs off the top of my head quite like her, and I don't mean that in a good way.

I spoke w/ someone who worked on a film w/ Gabrielle Union, he said she demanded a specific sandwich from a deli that was 45 minutes away from set every day and it had to come straight from the deli, so they couldn't order it on the way to set or anything and instead had to send a PA on the 1.5 hr trip everyday. Not sure if that makes her a bad person, though it does seem slightly unnecessary considering it wasn't for a particular diet or anything. Honestly it sounds like nothing compared to some of the things Gwyneth has done/said though.

What a lamereason to not like her. You can catch anyone in a moment like that, at some point. Why should they sit there are be excited about every award. I personally don't give a crap either when someone wins an award.
