No, Ashkenazic Jews are not 100% European.
They do have significant European mtDNA (matrilineal descent). This means that at some point in history, Jewish men from the Levant who came to Europe took native European women as wives and the women were converted to Judaism. Their patrilinear descent is for the most part Middle Eastern from the Levant. The result is that genetically, Ashkenazis are very similar to Sicilians who coincidentally were conquered by Arabs/Moors in history.

The Ashkenazi Jewish community is so thoroughly European in culture and physical appearance that most people looking at a picture of a Semitic Jew would probably confuse them as an Arab or Persian where on the other hand there is virtually nothing visually apparent separating Ashkenazi apart from others of European descent and you'd have a difficult time distinguishing between the two.

Ashkenazi who take the DNA test typically have European as their only result whereas Palestinian DNA results reflect their ties to the region. Greeks and Romans ruled and lived in Palestine many centuries ago, but their DNA still shows up in Palestinian DNA. Not Ashkenazi DNA.
