I hate to be that gal, but most people who think they love "Alfredo" have never actuallyhad Alfredo. Many Americans think Alfredo is a white sauce made with heavy dairy cream and a lot of garlic. It is not. It is a cooking technique of emulsifying butter, Reggiano or Pecorino cheese, or a blend of cheeses like I do and salty starchy pasta water with a bit of black pepper optional. If done correctly it makes a beautiful creamy white sauce that tastes nothing like olive garden Alfredo.

shareYou can go with any kind of pasta - the key is to make your own sauce.
Once you have that - spaghetti, linguine, angel hair, all fine.
If you use Ziti or Rotini, add ricotta cheese.
ANd of course on occasion, raviolis.
They all work if you have a good sauce underneath.
Oh and don't forget a sprinkle of Parmesan Cheese and some fresh Basil on top
