I prefer the seeds to the actual pumpkin (e.g. I'm not a fan of pumpkin pie). I prefer sunflower seeds to pumpkin, but do occasionally enjoy pumpkin seeds, and like sunflower seeds, prefer in-shell roasted.

I use a 12 gauge Mossberg pump action loaded with buckshot to dislodge them from the pumpkins then set the garden on fire to quickly roast them...
Then just a pinch of salt

It's not rocket science. Toss them in some kind of oil, olive, coconut, etc, and salt, and roast at low temp, 250 degrees, turning every 15 minutes until you're happy with them.

yup, eat them all the time, generally as a snack in the office. i don't actually prepare them though. i just pick them up from the bulk bin. when i became a vegetarian, they were always at the top of list of recommended foods.
