Depends on what the criteria is. Hard to know when it comes to those that left no recordings. All we have to go on for those like Liszt and Beethoven are their written music and what people reported about their playing.

I could never choose someone I'd never heard, but it depends on the music they play. Some pianists are great with Bach, others with Beethoven or Liszt or Rachmaninov or Debussy or Ravel or Messiaen... or jazz...
Thus I love Gould, Perahia, Perlemuter, Kempff, Berezovsky, Janis, Zimerman, Katchen, Richter, Horowitz, Rubinstein, Solomon...& let's not forget Oscar Peterson. If I could play like any pianist I think I'd go for Pletnev.
Anyone who says Lang Lang should be reported.
