My list, just off the top of my head (lord knows there's nothing ELSE on the top of my head):

Spiders: Earth vs the Spider

Rats/mice: Food of the Gods (this movie has several gigantized critters, but it's been too long since I've seen it...)
Sheep: Godmonster of Indian Flats
Bears: Prophecy
Lizards: The Giant Gila Monster
Birds: The Giant Claw
Octopi: It Came From Beneath the Sea
Praying Mantis: The Deadly (Giant?) Mantis
Grasshoppers: Beginning of the End
Turtles: Gamera
Crocs/gators: various, usually with titles like 'Crocodile!' and 'Alligator!'
Pigs: Razorback
Shrews: Killer Shrews
Walruses: Gorath (monster was named 'Magma;' scenes were cut)
Leeches: The Giant Leeches
Caterpillar/Moth: Mothra
Shrimp: Ebirah (Godzilla vs. the Sea Monster)
Crabs: (Attack of?) The Crab Monsters
Sea snails: (I know there was one, but I can't recall the title)

Actually some amazing FX, especially for that time. Great animation. I've only just watched the footage for the first time, but I always heard it was great.
