Try getting a cable that converts from the RCA jacks of the AV outputs (red and white) to the usual 3.5mm headphone jack. There's a good chance that will work. If the TV volume control doesn't control the AV output volume and it's too loud all the time, get an inline headphone volume control. You should be able to find cables and the volume control at a dollar store or the equivalent.
A more correct way would be to feed the AV output to a line input (AUX, CD) on a stereo receiver or cassette recorder or boom box that has a headphone jack. This may be necessary if your headphones are harder to drive or insensitive, and are too quiet or sound distorted when connected directly to the AV outputs.
