Bachelor Cuisine: Here's my recipe for lazy ass chili mac soup...
I pride myself on summoning a decent amount of creativity when I'm just too damn lazy or tired to go to the store. I can reach into my fridge and a couple of cabinets and put something together that's usually pretty good, but this in particular was about the best pan of crap I have ever put together. I tend to cook a lot and then either freeze leftovers or just eat for a week. This is a 3 lb meat + other stuff pot of chili soup. So here goes...
INTO THE POT WENT...
2 lbs 93/7 ground beef, and
1 lb of Potter's regular pork sausage
browned with dried onions
1 pkg of William's chili seasoning for 2 lbs
2 cans of Progresso hearty tomato soup
1 soup can of water
1 can of Ro-tel
1 can of canned diced tomatoes
1 to 2 cans of ranch style beans
1/2 tsp (or more) of red pepper flakes
1 cup to a cup and a half of dry elbow mac
Once the meats with onion are all browned, just dump everything else into the pot, mix it up and bring it all to a boil stirring every so often for 2-3 minutes and then reduce the heat. Simmer on medium heat, covered for about 10 minutes, stirring occasionally, and then uncovered for another 10 minutes stirring occasionally. Adjust timing as you like for thickness or pasta density.
