Making Omelets


This is one of my new year's goals, to make an omelet at home. 

I've only had them in restaurants.

Does anyone have any tips for a beginner?

I make dozens a year...very simple and delicious.

Julia Child said many times that an omelette should take no more than a minute to cook and to use high heat. I too go this route since Julia can do no wrong but I've also watched countless chefs work omelette stations at hotel breakfast buffets. If you've never seen an omelette station, the chef cooks the omelette in front of you and folds it directly on to your plate. So, you are an eyewitness to her/his technique literally at arms reach.

-high heat
-add butter, swirl
-add eggs and immediately scramble making sure to keep the bottom of the pan covered in eggs
-quickly add cheese and other chopped ingredients
-since I like my eggs soft, I immediately fold on to a plate
-if you prefer a more firm omelette, let stand for a few seconds and you can even cover with lid

That's it. So simple and seriously fool proof.

If you have a blender, blend 2 tablespoons of sour cream and 6 tbsp full cream milk together. Pour it into 2 beaten eggs and whisk together. Whatever kind of omelet you end up making, it'll be delicious with that base.

i just put it in the oven @ 240. low & slow. more of a frittata.

Everyone has given you great tips so I don't have that many.

1. I like using a non-stick pan with butter. My grandmother could make hers in a cast iron skillet but mine always sticks.

2. Keep an eye on it. A couple of times I started doing the dishes and the bottom of the omelet got too brown.

3. If you use cheese, slice it thin so it doesn't take that long to melt.

4. I also quick fry onions, spinach or other vegetables before putting them in the omelet. I like my veggies crispy.

Julia Child is the best, and I can whip up a French omelet in a minute following her technique. Non-stick pan (Julia used them), butter. Go for it!

...Bed Bath & Beyond has a neat stove top omelet maker that is essentially a 2 sided small pan. You add ingredients, close the pan, place on low to medium heat, and flip the pan about half way through a 2 to 3 minute cooking cycle. Instant omelet...!!!

I like mine w/onions, cheese, ham and green peppers...

I always want to try cool, "advanced technology" kitchen appliances like that but never get around to actually buying them. I've been meaning to get a George Foreman Grill for 22 years!
