I don't think Howard Johnson's is an unusual example, it changed the way Americans looked at restaurant food.
It set the stage for more 'casual' and 'quickie' foods in restaurants.
I've never been to Delmonico's, but have heard of it!

So glad they included HJ, not for the food or even that it revolutionized casual dining and franchising but because they were one of the first resto chains to have a food science lab and at one point Jacques Pepin ran it. Pepin is one of my all-tme favorites and if you ever watched any of his PBS shows, he mentioned Howard Johnson's regularly.

Spago
I was a bit surprised that Spago wasn't included. Disregard that it's the flagship of the Puck empire but Spago is the U.S.'s very first upscale dining open kitchen. Sure we have seen cooks doing their thing at diners since the dawn of time but exhibition kitchens in fine dining had not yet been introduced to America.

I agree about SpagoSeriously, right? And it's not even obscure. Most people who are in to food have heard of Wolfgang Puck and many have kind of heard of Spago. 🤔
