Cauliflower soup/puree for a cream soup alternative


Made this a few times several different ways.

Basically you steam/boil cauliflower until it's soft and then just puree it with a hand/stick blender.

By itself it's pretty bland. Save some of the cauliflower florets whole and add back to the puree. Also you can "toast" some of the florets to make croutons to top it with. Or use regular croutons.

But my favorite thing to do with it is add to another soup to make a faux healthy alternative to cream soup or chowder. I added it to my corn chowder instead of milk to thicken in and honestly couldn't tell this wasnt a cream soup.

Used it to make a vegetable chowder as well.

Even though it's puree'd cauliflower it almost tastes like cream of mushroom soup. So by adding saute'd mushrooms to it, you could use this in place of a can of cream of mushroom soup in recipes.
