I have the same problem which is why i don't grill very often. Maybe only once or twice over the summer.
What i have done is buy a whole package of something and grill it till it's almost done and then freeze it. (like a whole package of chicken legs/thighs).
Then when i want some i can finish cooking it in the broiler. It's not ideal but it's a bit of a treat in the middle of winter to have some chargrilled chicken.
Or if just want a burger or steak or some fish on the grill, i'll make a big bowl of marinated veggies (zucchini, onion, pepper, mushroom) and grill those after the meat/fish is done.
