If they hadn't created Padme, they would have just used some other macguffin to turn him to the dark side. after all, we know it happened.

Perhaps. Given his personality, he was highly susceptible to the lures of the Dark Side. Without Padme, he night have taken longer to turn, but still might have done so eventually. We'll never really know.

He wouldn't have gone to the dark side of the Force. Doubtful. Palpatine seem fairly determined to illustrate to Anakin that the ways of the Sith were superior to the ways of the Jedi, and that the Jedi were dishonorable and unconstitutional, while deliberately holding Anakin back.

Having visions of his wife dying was certainly a major catalyst in him turning, but he would have turned no matter what.

Palpatine was manipulating Anakin even when he was a child, which is featured in flashbacks in the Obi-Wan and Anakin comic series. This, coupled with a troubled childhood of slavery and being separated from his mother, not to mention his disillusionment with the Jedi Order, would have resulted in him falling to the Dark Side no matter what.
